Pappas Restaurants - Houston Experience

From Sunday, November 10 to Tuesday, November 12, 2013 a select group of HRM students traveled to Houston, Texas with professors Wally Rande and Jon Hales to visit the Pappas Restaurants corporate offices. Kelan Markey, Eryn Beechey, Samantha White, Arizania Clapper, Dillon de Hart, Dylan Harris, Dawson Hayes, Lindsay McEldowney, Sydney Thorson, Hannah Timm, and Adam Wolf toured the company’s headquarters and learned more about the company than they could have imagined.

“The purpose of the trip was to bring students so they could see the corporate side of a restaurant and Pappas just bent over backwards,” Rande said. “I’m sure we saw a lot of things that hardly anybody else [outside of the company] has ever seen.”

While there, they visited several of the Pappas restaurants, met executives, and toured the corporate headquarters as well as their meat processing plant and bakery.

What makes this company so different is that it is deeply integrated. According to their website, “we do more than simply run and operate our restaurants. We own and drive the trucks that deliver the freshest meats and seafood. We employ the electricians who keep the lights on and the kitchens humming. We even make our own chairs!”

This trip was made possible through Tammy Ledyard ('01 HRM) who is a recruiter for Pappas and is also on the HRM National Advisory Board.

“We contacted Tammy and she set this up. [Pappas] was so impressed with it that now they want to do this for other schools,” Rande said.

The students were able to learn a great deal from this experience, everything from how they do food prep in the restaurants to how shipments are taken. This was HRM’s fourth corporate trip. The faculty will continue to do so because of how successful they are.
